We got inspired by the BBQ traditions of the Ozarks mountain region in the US states of Missouri, Arkansas, Oklahoma, and Kansas, to create his magical coffee rub that will lend your brisket, sirloin steak, pulled pork or short ribs an out-worldly flavour depth and earthiness.
To make this rub a real powerhouse, we've picked a richer tasting coffee blend with deeper umami flavours that pairs remarkably well with the raisin and cacao notes of Mexican Ancho chilli (and is magical with beef and all kinds of grilled creations).
You'll taste a bit of smokiness, a bit of fruity sweetness, a hint of acidity and a touch of savouriness thanks to a beautiful combination of Mexican Ancho chilli and a full bodied, dark espresso blend (made out of single origin beans from Brazil, Tanzania and Guatemala) ground at just the right level of coarseness. Sharp black peppercorns, herbal oregano, grassy thyme and aromatic cinnamon take it all up yet another notch.
