This exquisite blend is inspired by Istanbul's vibrant spice markets and Turkey's ancient and versatile cuisine, which goes back as far as the 13th century.
Turkish cooking was all about 'fusion' well before it became so trendy and was influenced by China, Persia, India, Arabia, Eastern Europe and the Mediterranean. In the heady days of the Ottoman empire, Turkish sultans were, above all, devout foodies who built huge palace kitchens (one sultan reportedly had more than 1,200 kitchen staff) and consumed enormous food quantities - the monthly shopping list typically included over 500 chickens, 400 fish, 5 kilos of saffron, 70 lobsters and 4 litres of olive oil. Palace chefs celebrated local produce and fussed over perfect flavours for even the simplest of foods.
It's no surprise that modern Turkish cuisine boasts such a dizzying array of mezze, salads, meat and fish dishes and - importantly - impeccable desserts and pastries. Herbs and spices play an important part in Turkish pantries and so we've worked hard to capture all that grand culinary history, exotic flavours and delightful aromas in our Ottoman blend.
We've blended Aleppo pepper, a mild, earthy chilli that originates from Syria but now grows in Turkey. It has sweet, spicy notes and a sun-dried tomato, citrusy aroma. The mellow heat is balanced by lemony sumac, grassy oregano and a few other spices to create a versatile, crowd pleasing blend that will enliven vegetables, grains, meat, poultry, seafood or fish. You'll love Ottoman on pretty much anything. And your tastebuds will thank you.
This is a warm and spicy blend but a fairly mellow one thanks to Aleppo pepper at the base which imparts gentle heat and sweet, fruity notes. Grassy oregano, tart sumac, a hint of fragrant coriander and earthy cumin seeds all create well balanced, bold and bright flavours that will enhance food without overpowering the palate. Rose petals, a staple mediterranean addition, give it mild floral undertones (and a fabulous aroma).
This blend does not contain salt so you may wish to add sea salt to taste.
- Use as a rub for roasted or barbecued lamb cutlets, roasted chicken, beef stews and grilled fish. Serve with a fresh sharp green salad or lemony couscous.
- Marinate chicken breast with a few tablespoons of Ottoman, some olive oil and crushed garlic, then sear over medium heat to make a flavourful chicken that can be served over quinoa salad with some tahini sauce on the side.
- Add a lovely kick to seafood, vegetable soups, hearty stews & roasted vegetables. Try sprinkling on green beans, broccolini or sweet potato wedges with a drizzle of olive oil before sliding into the oven - yum!
- Scatter over sliced avocado with a squeeze of lime, fried or scrambled eggs or toss into shakshouka for oodles of flavour.
