This is your essential blend for Christmas cooking and beyond. Inspired by ras el hanout, a signature North African spice mix whose name means "top shelf" in Arabic and is considered the very best that a spice trader can offer.
Ras el hanout was traditionally used in Morocco and Algeria to flavour tagine (a North African stew, slow cooked over charcoal in an earthenware pot) and contained dozens (!) of different spices. It comes in many regional variations and secret family recipes but we promise you ours is primo!
This blend contains 12 exotic, freshly ground spices and is incredibly versatile. It will lend rich North African flavours and is perfect with festive roasts (especially lamb and beef), all kinds of roasted vegetables, hearty soups, slow-cooked stews, couscous, rice and more. Either way, you're in for a very special treat.
Fragrant, warm and a little bit floral. We've combined earthy, savoury cumin seeds with the most aromatic spices - anise seed, cinnamon, nutmeg, cloves, cardamom, ginger, mace and allspice. Grassy thyme lends it a herbal touch and rose petals bring a gentle floral aroma.
- Mix with olive oil, garlic and some lemon juice to make a lovely marinade for roast chicken, lamb roast, slow roasted beef or grilled fish fillets.
- Uplift hearty stews and soups by scattering a few teaspoons during cooking or adding to onions and olive oil when searing the meat.
- Scatter over roasted carrots, sweet potatoes or any root vegetables and drizzle generously with olive oil. Mix well and slide into the oven.
