Cardamom is known as the Queen of Spices and for good reason. Native to India but now also grown in Southeast Asia and parts of South America, this ancient spice has been used for centuries by the Egyptians (to cleanse teeth) and the Romans and Greeks (as perfume and incense and to aid digestion).
This is an essential spice in Middle Eastern, Indian and Persian cuisines. Cardamom lends Masala Chai its distinctive flavour and imparts that special aroma to biryani rice dishes. In Turkey they add cardamom to enhance black coffee. The vikings brought cardamom to Scandinavia and it's now commonly found in cinnamon buns and other pastries.
We've ground green cardamom pods to bring out the naturally sweet, floral and spicy flavour. You'll also find lingering notes of mint and eucalyptus. Cardamom is quite dominant so you don't need much to make an impact. Use sparingly and it'll transform humble dishes into something quite extraordinary. Cardamom is especially nice with subtle flavours like milky breakfast oats, coconut milk smoothies or vanilla ice cream. It elevates mellow root vegetables, rice dishes and lentil stews. It adds a special depth of flavour to gin based cocktails. It also cuts through very sweet desserts so it's a natural pairing for chocolate and cinnamon.
