Say hello to your new flavour buddy. This mild chilli originates from South and Central America but is nowadays cultivated in Syria and Turkey (where Aleppo Pepper is also known as "Pul Biber" or "Marash Pepper").

Traditionally used in Middle Eastern and Mediterranean cuisines to flavour grilled meats, this versatile chilli is used by celebrity chefs and home cooks and admired for its complexity and depth of flavour.

Aleppo pepper elevates grilled fish and seafood, roasted vegetables, stews, soups, cooked eggs and anything in between. A great salt-substitute and so much more complex in flavour than mundane chilli flakes. The coarse red crimson flakes make it ideal for finishing dishes as well as using during cooking to enhance anything that needs a bit of a flavour kick. One thing's certain - once you've tried Aleppo Pepper you'll never look back.

Flavours

A very mellow chilli that is a bit sweet and has a citrusy, peppery aroma with notes of sun-dried tomato. It's coarse flakes are a bit oily and it'll add a warm mildly spicy flavour to any dish.

Great with

  • Sprinkle over grilled seafood or fish (think fried calamari or grilled prawns)
  • Scatter over vegetables and mix with olive oil before roasting.
  • Delicious as a rub for chicken or lamb or add to minced meat to make meatballs or kebabs.
  • Great with vegetables and bean stews.
  • Sprinkle over sliced mango.
  • Add to chocolate desserts instead of normal chilli.
  • Sprinkle over pizza or add to pasta sauces.

Urfa Chilli (aka "Urfa Biber" or "Isot Pepper") is an alluring dried Turkish chilli that's just perfect for autumnal dishes like roasted root vegetables and braised meats. It originates from a unique type of red chilli pepper (similar to poblano) that is harvested and left to dry naturally in the sun to develop its unique dark burgundy colour. Farmers then cover it overnight with fabric to keep it from drying entirely and preserve some of its natural oils. Urfa's unique texture and remarkable depth of flavour make it such a tremendous spice that's adored by chefs and can be used as a finishing spice as well as in cooking to lend food that special oomph.  

Flavours

Urfa chilli has an intriguing salty, spicy, smoky and a bit sour flavour with hints of raisins and chocolate. It doesn't overwhelm or overpower a dish but leaves a lingering pleasant heat with plum and cacao undertones.  

Great with

  • A versatile chilli that's a great alternative to the hotter Mexican variety.
  • Great sprinkled into meat or poultry stews during cooking.
  • Scatter over root vegetables and mix in with olive oil before roasting (sweet potato, celeriac or parsnips)
  • Add to roasted or fried eggplant.
  • Mix into greek yoghurt for a satisfying dip for roasted or raw vegetables.

Sumac is the spice that practically defines Middle Eastern and Persian cuisines. Commonly used across the Mediterranean to add lemony, tart flavour and a delicious fruity tang to salads, humous and grilled fish. Its acidic zingy flavour pairs well with grilled meats as it cuts across their richness.

Sumac is essential in the za'atar spice mix and can make or break a Lebanese fatoush salad or Persian Pilaf rice. It gives a distinct flavour to Turkish lamb kebabs and is scattered over humous plates all over the Levant.

Sumac hails from the Mediterranean and grows wild in Turkey, Italy, Sicily and across the Middle East. The plant's rusty burgundy berries are harvested before they ripen, dried naturally in the sun and coarsely ground to what we know as sumac. 

It can be used in cooking and marinades but is equally appealing as a finishing and garnishing spice that you can simply sprinkle over tomato and cucumber salads, grilled eggplant or roasted cauliflower to make them taste so much better.

Flavours

Astringent and tart with notes of raspberry and ripe tomatoes and a sour aroma. Use to add acidity and a lemony flavour to complement and enhance salads, roasted meats, dips, creamy cheese and even fruit. 

Great with

  • Garnish humous or tahini plates.
  • Sprinkle over grilled fish fillets. 
  • Scatter over salads - especially good on lettuce, cucumber, fennel and tomatoes.

Made of pure white salt that is hand-harvested from the waters of the Murray-Darling basin in south-eastern Australia and naturally dried in the glorious Aussie sun, this salt is nothing like the processed table salt varieties. This salt is smoked on reclaimed oakwood from wine barrels and blended with bird's eye chilli, a humble hot little pepper native to Southeast Asia. 

Use as a finishing salt to give food a bit of brightness and heat and add a salty smoky crunch. The perfect sidekick to all kinds of fish, seafood, roasted chicken, grilled vegetables, fresh salads or smashed avocado toast.
