Urfa Chilli (aka "Urfa Biber" or "Isot Pepper") is an alluring dried Turkish chilli that's just perfect for autumnal dishes like roasted root vegetables and braised meats. It originates from a unique type of red chilli pepper (similar to poblano) that is harvested and left to dry naturally in the sun to develop its unique dark burgundy colour. Farmers then cover it overnight with fabric to keep it from drying entirely and preserve some of its natural oils. Urfa's unique texture and remarkable depth of flavour make it such a tremendous spice that's adored by chefs and can be used as a finishing spice as well as in cooking to lend food that special oomph.  

Flavours

Urfa chilli has an intriguing salty, spicy, smoky and a bit sour flavour with hints of raisins and chocolate. It doesn't overwhelm or overpower a dish but leaves a lingering pleasant heat with plum and cacao undertones.  

Great with

  • A versatile chilli that's a great alternative to the hotter Mexican variety.
  • Great sprinkled into meat or poultry stews during cooking.
  • Scatter over root vegetables and mix in with olive oil before roasting (sweet potato, celeriac or parsnips)
  • Add to roasted or fried eggplant.
  • Mix into greek yoghurt for a satisfying dip for roasted or raw vegetables.
  • Serve on a cheese board next to chutneys for sprinkling over all kinds of mellow cheese.
  • Sprinkle over oily white fish instead of salt.

Harissa is a North African chilli paste loved by cooks from Morocco to Tunisia and widely used in the Middle East as well. This blend is a tribute to the classic harissa recipe (and is a powdered version) which usually involves roasted chillis, red capsicum, caraway seeds and coriander seeds. We've made ours a bit fancy with a floral addition of rose petals and a herbaceous touch of mint to balance the pungency of African chillis and green jalapeños. 

Rose Harissa is super versatile - pair with fish fillets or grilled prawns, add to soups and stews, marinate grilled chicken or roasted lamb, boost roasted vegetables, uplift pasta sauces - you get the idea. Either way, you'll be hooked.

Flavours

Pungent, spicy and hot with rose petals and mint notes to cool the heat.

Great with

  • Mix with olive oil, garlic and some lemon juice to make a lovely marinade for roast chicken, lamb roast or roasted fish fillets (great with salmon or barramundi, grilled, fried or roasted).
  • Uplift hearty stews and soups by scattering a few teaspoons during cooking or adding to onions and olive oil when searing the meat.
  • Boost your roasted vegetables - scatter over roasted carrotssweet potatoes or any root vegetables and drizzle generously with olive oil. Mix well, then slide into the oven.
  • Rub some Rose Harissa on corn before grilling (with some butter or olive oil).
  • Magical with eggs - especially braised or scrambled or sprinkled into your shakshouka sauce during cooking.
  • Pair with tomato based pasta sauces for a spicy twist.
  • Dilute in yoghurt to make a spicy dip for grilled meats or roasted veg.
  • A natural choice for koftas/meatballs and even fritters.
  • Scatter over roasted crispy chickpeas, roasted eggplant or carrot & ginger soup.

AROMATIC. EARTHY. MELLOW HEAT.

SEASON AS THEY DO IN MOROCCO.

We were inspired by Morocco's gastronomic and spiritual capital, Fez, when we came up with this blend. This is our interpretation of chermoula, a condiment that's at the heart of Moroccan cuisine, traditionally used to flavour fish and seafood. Fez also works wonders on all kinds of roasted vegetables, grains and pulses and will add a distinct Moroccan vibe with plenty of oomph! 

Flavours

We've mixed roasted cumin and coriander seeds, the traditional base ingredients, with sweet paprika, a touch of chilli for a bit of heat, a dash of sumac to add some acidity and tart notes, sage for its green woody aromatics and a hint of black pepper and garlic for pungency. 

This blend is SALT FREE - you may wish to add sea salt to taste.

Great with

  • Sensational as a rub for grilled white fish fillets or seafood - just mix a few table spoons of FEZ with some olive oil, lemon juice, garlic, salt to taste and toss a few chopped herbs such as lemon thyme to make a lovely marinade. Then brush on the fish to coat on all sides before grilling or roasting.
  • Use as a marinade for grilled chicken with a drizzle of olive oil.
  • Scatter a few teaspoons over roasted veggies (pairs well with root vegetables, eggplant or capsicum). Drizzle some olive oil and salt to taste before sliding into the oven.
  • For a distinct Moroccan flair, add a couple of teaspoons to tagines (slow-cooked North African meat or vegetable stews), rice or couscous during cooking.

Jerusalem Mix (or "me'orav yerushalmi" in Hebrew) is a famous Israeli mixed grill/street food. Legend has it that Jerusalem Mix was invented by a street vendor in the famous Mahane Ye'huda market, back in the 50s, when he sautéed lamb and chicken bits with onions and cooked them on an open flat grill using a secret spice mix. The juicy combo is served in warm pitta bread, with tahini sauce and Middle Eastern pickles. Even Ottolenghi's London restaurant, Rovi, is serving a Jerusalem Mixed Grill in both a meat and vegetarian option. 

We've aimed to capture this great Jerusalem tradition and beautiful flavours in a blend that will add complexity and unique flavours to all your grilled creations, roasts and roasted vegetables. It'll all taste phenomenal. It's a promise.

Flavours

Savoury, smoky and deeply earthy thanks to a turmeric and coriander seed base with subtle tart notes of sumac and a complex aroma of smoked paprika, ginger, cumin and cardamom.

This is a salt-free blend - you may wish to add sea salt to taste.

Great with

  • Make a marinade with a few teaspoons of Jerusalem Mix blend, extra virgin olive oil and some sea salt and black pepper. Great for all kinds of roasted or grilled meats and fish.
  • Use as a dry rub for your grilled creations.
  • Add Jerusalem Mix to grilled or roasted vegetables - pairs especially well with eggplant, potatoes, parsnips, carrots, capsicum, zucchini or cauliflower.

This beautiful blend is our interpretation of "advieh", an ancient spice blend that's a staple of Persian cuisine and been used for centuries to flavour to all kinds of stews, rice dishes, soups, roasts, casseroles, rice, legumes and roasted vegetables. Persian cooking is known for its heady mix of contrasting flavours and colours and heavy use of enchanting spices, dried fruit, nuts and herbs. And ridiculously delicious rice.

Simply sprinkle into stews, flavour your rice dishes, scatter over roasted vegetables before sliding into the oven or use to marinade your next lamb roast. We promise you a truly delectable experience.
