FYI, we found the spice blend you won't be able to live without. Black Smoke is like a southern BBQ in a jar and a must have for BBQ lovers and grill masters. Inspired by the Deep South and traditional BBQ styles from Louisiana, Alabama, Georgia and Tennessee, where meat is rubbed with secretly guarded spice blends before it's wood smoked, low and slow. 

Flavours

Well-balanced with bold, smoky flavours and a delectable outdoorsy aroma. We've blended sweet paprika at the base with savoury notes of black peppercorns and coriander seeds, a touch of Mexican ancho chilli to give it a bit of a mellow kick, a hint of fragrant cloves and a touch of garlic flakes and yellow mustard seeds for pungency.  

Great with
 

  • Flavour all kinds of grilled meat and poultry - use a few generous teaspoons to marinate or dry rub beef steaks, pork chops, chicken thighs or lamb cutlets for at least an hour (for best results, marinate overnight). Then grill or slow cook on the barbie.
  • Sprinkle on sweet potato wedges, eggplants or sliced capsicum with a drizzle of olive oil before sliding into the oven, for a delectable treat.
  • Add heaps of flavour to charred white fish fillets (we love it on barramundi but cod works well too) by marinating with a few teaspoons of Black Smoke, some olive oil, garlic, and lemon slices before roasting or grilling.

"Carne Asada" means grilled meat in Spanish and a well known traditional Mexican dish. In Mexico they make it with thinly sliced skirt or flank steak cooked fast over a very hot grill, then put in a tacos, tortillas or burritos with grilled onions and a spicy Mexican salsa. Yum-y! In southern California, they serve it with queso, onions or sliced avocado and lime. Either way this authentic South American blend will transport you to the Mexican countryside without ever leaving your kitchen.

Flavours

Bright& spicy thanks to the two most popular chillis used in Mexican cuisine - Ancho chilli and Guajillo chilli at the base combined with 8 other spices - from the earthy cumin and coriander seeds to grassy oregano, a touch of acidity from onion and garlic and sweet, fruity undertones of cloves and aniseed. 

Great with

  • Make a delicious marinade for 450g thinly sliced beef by mixing  2-3 tsp of Carne Asada with 1/2 cup olive oil + sea salt + black pepper + juice of 1/2 a lemon (or orange). Mix well and marinade for 30 mins or overnight. Then grill on high heat and serve in tacos with sharp salad, avocado slices and a squeeze of lime.
  • Season white fish fillets or prawns before grilling (either as a dry rub or marinade).
  • Make a marinade for grilled chicken by mixing 2-3 tsp Carne Asada with some olive oil and fresh herbs (thyme or rosemary).

They say everything's bigger in Texas and BBQ is no exception. Become a southern pitmaster with this insanely versatile blend. Inspired by Texan BBQ traditions where grilled meats are rubbed with spices and cooked low and slow over indirect heat from oak, pecan or hickory wood fire.

This smoky blend will be right at home at summer BBQs but you can use it any time of year to add that lovely outdoorsy flavour to all kinds of grilled creations. Perfect with beef as well as pork, lamb, poultry, fish or seafood. 

Flavours

This is a bold, earthy blend with citrusy sweet undertones that combines smoked paprika and woodsy sweet coriander with aromatic sweet notes of fennel, allspice and nutmeg and a hint of pungency from mustard seeds and orange peel.

Great with

  • Rub on pork, beef, chicken, fish or seafood (mixed with olive oil, garlic and your favourite herbs) and marinate for a couple of hours (or overnight) before grilling.  
  • Get creative and sprinkle onto soups or stews for a warm, earthy southern touch.
  • Mix a few teaspoons of Pitmaster with some olive oil and drizzle over roasted vegetables before sliding into the oven, for oodles of flavour.

  • Use to make a delectable Argentinian BBQ rub for fire-grilled steaks, beef sausages or burgers, meatballs or kebabs. Pro-tip Add some home-made Chimichurri on the side for an authentic Guacho experience at home.
