Spicy pan seared salmon & garlicky broccolini

This is a quick and remarkably easy way to add robust, natural flavour to a super healthy meal. our Mexican inspired BARBACOA blend imparts a lovely spicy touch with a chipotle chilli base, paprika, oregano and other spices, making the humble salmon taste absolutely divine. Yes, nutritious food doesn't have to suck! This dish will no doubt go into your weekly rotation and is very low effort. What's not to love. 

 

 

Ingredients 

      •  BARBACOA spice blend, 2-3 teaspoons 
      •   Extra virgin olive oil - 2 tbsp plus extra for searing
      •   2 salmon fillets
      •   a small bunch of broccolini, trimmed and ends chopped
      •   2 garlic cloves, peeled, finely chopped
      •   1 lemon
      •   20g unsalted butter
      •   Sea salt
      •   Freshly ground black pepper 

 

Method

      1. In a small mixing bowl place the BARBACOA and mix with olive oil and some salt and pepper to taste to form a marinade paste. It should not be too runny. More like a honey consistency. Pour the marinade over the salmon fillets in a large baking tray, cover the salmon with the marinade all over and set aside for 10 mins.
      2. Heat a large frying pan and foam the butter on medium heat. Once the butter begins to foam, add the salmon (skin down) and cook on medium heat for 3-5 mins (depending on the fillet's thickness). Then flip and cook for another 3mins or so until the salmon is cooked through to your liking. Add a bit of olive oil to the pan if the butter is absorbed to make sure the fish doesn't stick to the pan.
      3. Meanwhile, in another frying pan, fry the garlic with some olive oil on medium heat for 1-2 mins. Add the broccolini, stir well and cook for another 5-8 mins until the broccolini softens (but is not mushy).
      4. Serve the salmon and broccolini with a generous squeeze of lemon over both and garnish with a lemon wedge.
